Easy Meals with Rotisserie Chicken

The days are officially getting shorter and now that we have entered the holiday rush, our time is very valuable. One daily chore that tends to fall to the waist side is preparing dinner. Unless you get ahead start by prepping dinner in the morning, the chances of making a filling and nutritious meal after a long day is slim to none.

The majority of people opt to hit up the closest fast food spot and grab a bag full of grease and processed ingredients. I will admit that I’ve fallen victim to the ease of a drive-thru window after a long day. However, I’ve recently cut back on fast food. Okay, I might have stopped by Chick fi la a time or two in the past month, but that’s it.

Still, on those days when I really don’t have time to prep and cook or know I’m going to have a busy week, I opt to stop by the grocery store and pick up one those rotisserie chickens. I always keep bags of spinach in my fridge. So, I pull off a thigh and wing off the chicken and throw it on top of a bed of spinach and tomatoes to create a fast, simple and healthy dinner when I get home. However, I’m usually left with plenty of chicken leftover.

So, I’m always looking for other recipes that I can use the remaining chicken to create an easy and more satisfying meal. So here, are some easy meals with rotisserie chicken, be it store-bought or homemade chicken.

You can never go wrong with a nice soup on a chilly night. Therefore, this quick and easy chicken tortilla soup will be very much appreciated by all and it only takes 30 minutes. Can’t beat that!

One of my favorite meals I made recently was this chicken fried rice recipe from The Recipe Critic. Not only was it delicious, but like it’s name, it was way better than takeout chicken fried rice.

Aside from spinach, kale is another one of those vegetables that I buy in bunches and then left with having to find more ways to use it other than for juice or a salad. Chicken pot pie is an ultimate comfort food. The hearty chicken and vegetable filling combined with the soft and flaky crust is just a win-win all around. I love this chicken pot pie recipe from Katie’s Cucina, because the recipe is easy and the individual servings are convenient to take leftovers to work for lunch.

Classic Meals To Cook in A Crock Pot

It’s that time of the year when my days (and energy) begins to get shorter and shorter. I tend to blame it on trying to meet work deadlines before the end of the year and the comforting (read: lazy inducing) cooler weather.

As soon as the weather even attempts to get cooler, I pull out of my crock pot from the cabinet and make a hearty batch of homemade chili. However, chili and soup aren’t the only traditional meals that you can make in a crock pot. Actually, you make pretty much any meal that call for an oven.

Check out these classic meals that you can (surprisingly) cook in crock pot. Most of these recipes will allow you to have them cook throughout the day and be ready by the time you get home from work.

Plus, some of these classic meals to cook in a crock pot will come in handy around the holiday time when you run out rack space in your oven. Keep reading…and prepare to salavate.

I love lasagna and so does my sister. She loves my lasagna so much, she requests that I make it on her birthday every year. This year, I think I’m going to try to make it in a crock pot, like this recipe here. Doesn’t it look delicious? It even has the baked cheese (which I love) topping, which makes it even harder to believe it that it never touched the oven.

Roasted chicken is one of my all time favorite meals to make (and eat). Plus, there’s always so much left, you can make multiple meals for days. This classic roasted chicken recipe from The Little Kitchen is worth trying.

Cincy Shopper not only shared her recipe on making meatloaf in a crock pot, but also threw in potatoes and carrots into the crock pot to roast along side the classic entree’. Mashed potatoes is one of my favorite comfort foods. This recipe for Buttery Garlic Mashed Potatoes calls for everything to be done in the crock; even steaming the potatoes. You can even leave the skin on, which is great because 1.) Less work to do 2.) red mashed potatoes are so amazingly perfect.

One of the first meals I make when I dust off my crock pot each fall is pot roast, like this pot roast recipe from Joyously Domestic . It’s one of the most “It’s finally fall” meals you can make. Plus, it’s kind of one of my mom’s traditions to make pot roast the first Sunday of fall and I think I’m going to keep that tradition going. Just like with the meatloaf recipes above, you can roast veggies with the beef, which (in my opinion) makes the pot roast taste even better.

Yes, even dessert can be made in a slow cooker. Although there are plenty of cake and cobbler slow cooker recipes, I was drawn to this baked apples recipe. I bet this smells amazing while cooking. Plus, baked apples are so delicious and 10x delicious in the fall.

Trendy Velvet Sofas

When it comes to most things in my life; I prefer things that are simple and easy to deal with it and that definitely includes my furniture.

When I purchase furniture, I look for classic pieces in neutral colors that I design around and for many years, which makes my current obsession seem a little more than unusual.

Recently, I’ve developed a fascination with trendy velvet sofas. This recent appreciation comes at a shock to pseudo-minimalist me, because a velvet sofa can seem very flashy and too retro for most taste. However, with the right color, shape, and detail; what was once looked at as as dated piece of gaudiness is now a chic and luxe piece of furniture.

I found some pretty amazing and velvet sofas in various design areas. So, I’m sure you might find a chic and trendy velvet sofa to dream about having in your home, too.

How to Cut People Out of Your Life

This is a touchy topic for some and there are actually some people who don’t agree with “cutting people out of lives.” It can seem very harsh and extreme. I agree. However, sometimes people do things that are harsh and extreme to people without any regards to how that will effect the other person. Therefore, the only thing that you can do is remove them from your life, stop carrying them with you, and move along.

Over the past few years, I’ve had a handful of people enter my life and shared plenty of great moments with said people. Unfortunately, things happen in friendships and relationships. Some things are minor and can easily be repaired. There are some things are just broken beyond repair, be it because the crash was too big and destroyed the relationship or the relationship was barely holding up and that final feather made even come crashing down.

Trust me, I’ve had plenty of “straw that broke the camel’s back” moments in my life, because I’m a forgiving person. When it comes to friendships, I cherish them and treat them like family; with respect and kindness. Unfortunately, there are people who take your kindness for weakness, which is a saying a never full understood until I experienced for myself. Even as I sit here, it’s still very unbelievable to think that some people can misconstrue the act of kindness and treating others as they would want to be treated as a sign of weakness and an open invitation to be walked upon. It’s a very disheartening, but a part of the make-up of some people.

Having to cut ties with people can also include people with whom you’ve had a romantic relationship. I will admit, that ending unhealthy and unfilling relationships with guys has always been a little trickier for me than cutting out former friends. For me, all my past romantic relationships have been deep. I recently had to finally end a situation with a guy that I’ve been “chilling” with, on and off, for 3 years. I know, I know.  Anyway, he gave me the impression that he was a “great guy” and he’s is, but just not for me and when he finally showed me who he was, I had to finally stop entertaining him. Okay, maybe he showed me on more than one occasion (more like 3), but I finally was able to be like enough is a enough. Three strikes, I’m gone.

Don’t get me wrong, I’m human, too. Humans make mistakes. However, humans also know when they’ve messed up. When people make legit mistakes, the next course of action is to acknowledge the mistake, apologize for making said mistake, and wholeheartedly try not to make the same mistakes again. Sounds like three easy little steps…and they are…until you get to that final step and start the cycle all over again. It happens to the best of us.

Funny thing about mistakes. If you keep making the same mistake over and over and over, it eventually turns from a mistake to a habit and then that mistake is now one of your characteristics. After so many chances, it’s only natural and understand to come to the decision that it’s best to cut ties with someone and remove them from your life.

For times when you’ve had enough of negative people, here are the appropriate steps you need to take in order to cut people out of your life…for good:

  • Delete, Delete, Delete – Obviously, this should be the first step to cutting someone out of your life, but some people don’t do this. Instead, they just block the number, which is definitely a needed step. However, on those days when you’re reminiscing about good times with your former partner in crime at the bar or feeling lonely and want some affection, you might find yourself scrolling through your contact list and get the temptation to “see how they’re doing”. Next thing you know, the cycle has started all over again and back to feeling used and unhappy. No, just delete all their contacts (emails, too) from all your devices.
  • Unfollow and Unfriend – It’s 2015 and you can send messages through practically any form of social media, including games and apps. An ex tried to pop back into my life via Facebook messenger. I deleted and blocked him while he was sending the second message. I got him off my screen in 5 seconds. So, double-check to make sure you all don’t follow each other on social media. If they follow you, most apps and platforms allow you to block accounts from contacting you.
  • Have a ‘Block’ Party – Yes, you have to block them. Like I said above, it’s necessary, because people don’t miss what they have until it’s gone and that includes genuine people and friends. So, it’s not just enough to delete their contacts and unfollow across social media, but also block them.. They reminisce, too.
  • Have Forgiveness and Hope – Yes, forgive them…if they apologize. No matter if it’s a genuine apology or not, forgive them and hope that learn they lesson and to not pull that mess with the next person, because you’re not giving them any more opportunities to test your kindness. Right? Right!

In the end, not all friendships and relationships are meant to last forever. Over your entire life, people will come in and out of your life, bringing sprinkles of good and bad, but just know, they’re not meant to be there forever. So, it’s okay to pray for them and hope they have a good life…from afar. I’ve always tried to take something away from failed relationships, even if learning that there’s somethings that I just can’t tolerate from people. Still, I was able to take something away and use it to hopefully find and form better relationships down the road.
