Favorite Meatless Food Finds

When the world began to implode with Covid-19, I prepared to hunker down like most folks. However, my everyday life didn’t really change much, because I was still going to work. Yet, one thing that drastically changed was my eating habits and options. Not only did I stop eating at most restaurants, even if they were open, I also go vegan and vegetarian a few times. Actually, I go vegan a couple of times a year as a quick digestive detox. So, I know of some really good meatless food finds.

I decided to cut back on my meat intake when the pandemic hit. I’m not huge fan of meatless beef. Trust me, I’ve tried all of them. So, I try to stick with the chicken alternatives and I’ve tried quite a few brands. However, the one I’ve been loving are the Alpha Foods Crispy Chik’n Patties, which tastes exactly like the chicken patties from the frozen food section. I was gifted a box a couple of months ago and pretty much ate them everyday for a couple of weeks. They’re vegan, plant-based, and dairy free – all the good stuff. They are microwaveable, but they taste crispier in the oven.

Although they taste good on any bun, I prefer to eat them with lettuce wraps, pickles, some grilled onions, and a little chicken sauce. So good! You can buy them at Costco – I’ve repurchased them twice already. Good meatless option to keep in the freezer.

Another plant-based item that I keep stocked in my freezer are these plant-based chocolate chip cookies from Kroger’s Simple Truth line. If I’m going to be honest, I’ve yet to meet a vegan chocolate chip cookie that I didn’t like. However, these are the first frozen ones I’ve tried and really don’t see why I would buy non-vegan ones if these are so freakin’ good? *shrugs*

Finally, other than the chik’n patties, the other meatless meal that I’ve been eating most days are veggie fajitas. Veggie fajitas are so easy to make and filling – grilled peppers and onions on tortilla. However, I found something that adds some kick to them – Trader Joe’s Everything but Elote seasoning. FYI, elote is mexican street corn that’s covered in mayo, cheese and spices. If you haven’t had one, you’re missing out.

Anyway, back to this seasoning, it has all of the the ingredient you would put on street corn. I’ve put it on everything from corn, potatoes, eggs, and veggie fajitas. It doesn’t make it spicy, but just gives it a little kick.
